Pumpkin Roll

To begin, we gathered our ingredients :)
3 eggs
2/3 cup plain pumpkin (not pie filling)
1 cup sugar (maple sugar may be used if available)
3/4 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
powdered sugar (for sprinkling)



Next, we mixed our ingredients in a stand mixer on medium speed!


Then, we greased a jelly roll pan with shortening, placed wax paper on top and then greased the wax paper :)


Pour the batter into the prepared pan!

Bake in a 350° preheated oven for 15 minutes (or until it springs back when touched in the middle)

We sprinkled delicious powdered sugar onto a smooth dish towel!

Roll pumpkin roll into towel while it is hot, place on cooling rack and let it cool! (takes about an hour or so)
